  18. Get As required Chopped coriander leaves
  19. Prepare Khada Garam Masalas
  20. Get 1 bay leaf
  21. Get 2 elaichi
  22. Get 1 cinnamon stick
  23. Get 1 dried red chilli
  24. Get For paneer coating
  25. Take 1 tbsp dry, roasted besan
  26. Get 1 tsp Kashmiri red chilli powder
  27. Prepare 1/2 tsp salt
Steps to make Restaurant Style Shahi Paneer:
  1. Heat a kadai, add 2 tbsp ghee to it. Then add all the khada masalas. Let them splutter, then add chopped onion into it. Add ginger-garlic paste. Mix everything well.
  2. Fry the masalas well until it turns golden brown in colour.
  3. Then add coriander powder, cumin powder, salt, kashmiri red chilli powder, spicy red chilli powder, garam masala powder and give everything a good mix.
  4. Then add chopped tomatoes to it. Mix it well and fry the masalas, until oil starts releasing from the masalas.
  5. Then add beaten curd to it. Quickly mix it well with the masalas or else the curd will start curdling & start getting chena kind of texture. Then add sugar to it & fry the masalas for few more seconds. Switch off the flame.
  6. Now take a bowl, add paneer cubes to it, then add salt, roasted gram flour & kashmiri red chilli powder. Flip them by mixing everything well so that the masalas gets coated with the paneer cubes.
  7. Now take another pan add 1 tbsp ghee, heat it then add coated paneer cubes to it. Then add chopped garlic into it. Mix everything well & fry them for 2 to 3 mins on a low flame.
  8. Now add the paneer-garlic mixture to the fried masalas. Give everything a good mix. Fry everything for 2 mins. Then add water to it. Cover it and cook it on a low flame for 2 to 3 mins. Then open the lid and add kasuri methi to it. Mix it well.
  9. Then again cook it for 2 more mins. Finally add some fresh cream to it. Mix it, then add some freshly chopped coriander leaves. At last give everything a good mix.
  10. Switch off the flame. Now for smoky flavour, burn a piece of charcoal. Put it inside a small vati (small steel bowl) pour a tsp of ghee over it. Blow it hard then quickly cover the pan and let it remain as it is for about 10 mins.
  11. After 10 mins, open the lid, remove the charcoal vati & give everything a good mix. Finally add a dollop of butter to it. Garnish it with some more chopped coriander and some fresh cream. Serve it hot with naan or tandoori roti of your choice.
