- Make ready 1 teaspoon ginger garlic paste
- Take 1 cup finely chopped carrot
- Take 1/2 cup peas
- Get 1/2 cup cauliflower
- Make ready 1 tomato
- Get 1 small capsicum
- Make ready 250 gms cabbage
- Get 2 potato
- Prepare 1 cup curd
- Prepare 1 teaspoon chilli powder
- Prepare 1/2 teaspoon turmeric powder
- Get 1 teaspoon salt
- Get 2 teaspoons biryani masala
- Make ready 2 teaspoons coriander mint paste
- Get 1 cup water
- Make ready 200 grams paneer
- Take for plating-
- Make ready as required Saffron
- Make ready 3 tablespoons Milk
- Get As required Fried onions
- Make ready as required Coriander leaves
Instructions to make Veg dum biryani:
- First wash rice and soak it in water for 2 hours.
- Now take a pan and add water, bay leaf, cinnamon,clove, pepper, salt and oil in it and boil it 10 mins. Now add the soaked rice and boil it until it cooked (make sure it’s not fully cooked).
- Now transfer it in a stainer and add cold water (to make sure it does not stick)
- To make biryani masala - (see recipe)
- To make barista - Cut the onions into slices and add it in hot oil. Make sure to add the onions in small portions. As soon as onion starts frying slower the flame. - Constantly stir the onions and after they are golden in colour take it out.
- Now we will make veggies. Chop all the vegetables as show
- Now in a pan add water and boil it for 5 mins. Add salt and half spoon sugar in it. Then add all the vegetables and boil it for 10 mins.
- Now remove the excess water using a stainer. Now allow it to cool down.
- Now in a pan add oil, ghee, bay leaf, cinnamon, cloves, cardamom, star anise,shahi jeera. Cook until it turns aromatic.
- Now add ginger garlic paste and onions and sauté until the onions become brown.
- Now add all the vegetables. Add coriander powder, turmeric, salt, biryani masala and red chilli powder.
- Then add curd and paneer. Mix it - Your vegetables are ready.
- Now take milk add in some saffron and mix it.
- Now take microwave bowl and grease it with ghee. - Now add the vegetables to make the first layer.
- Then add rice to make the second layer. Add fried onions, fried cashews, coriander and saffron milk in it
- Now add another layer of vegetables. - And another layer of rice.
- Add fried onions and cashews, saffron milk, ghee. - Now take a aluminium foil and grease it with ghee and cover it on top of the bowl
- Now put in on a gas for 30 minutes.

- After 30 minutes your tasty biryani is ready.
